De plus, la consommation de ce <strong>\u00ab l\u00e9gume de printemps \u00bb<\/strong> et <strong>\u00ab l\u00e9gume plaisir \u00bb<\/strong> est elle aussi affect\u00e9e par la m\u00e9t\u00e9o parfois capricieuse de cette p\u00e9riode de l\u2019ann\u00e9e.<\/p>\n\n\n\n<p>Ce jeu entre <strong>offre et demande<\/strong> constitue la base de la fixation des prix de l\u2019asperge, et donc de la <strong>rentabilit\u00e9 de la culture<\/strong>. Pouvoir anticiper la dynamique de production est donc un <strong>atout d\u00e9cisif<\/strong>, en particulier lorsque l\u2019asperge est commercialis\u00e9e par les cha\u00eenes de grande distribution (hypermarch\u00e9s, discounters), qui exigent une <strong>planification des approvisionnements et des prix<\/strong>.<\/p>\n\n\n\n<p>En France, o\u00f9 la production totale avoisine les <strong>25 000 tonnes<\/strong>, l\u2019asperge est produite dans tout le pays, avec de grandes surfaces situ\u00e9es dans les Landes, le Maine-et-Loire, la Gironde, le Gard et le Bas-Rhin.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mieux anticiper la dynamique de production<\/h3>\n\n\n\n<p>\u00ab Les prix sont g\u00e9n\u00e9ralement \u00e9lev\u00e9s au d\u00e9but de la campagne, avec des cotations au stade exp\u00e9dition, fin f\u00e9vrier pour les Landes, autour de <strong>12 \u20ac\/kg<\/strong> (asperges blanches, sud-ouest, cat\u00e9gorie 1, calibre 16\u201322 mm), car les informations sur les volumes restent confidentielles \u00bb, explique <strong>Astrid Et\u00e8venaux<\/strong>, directrice de l\u2019IGP nationale Asperges de France. Puis, les prix chutent fortement jusqu\u2019\u00e0 fin mars, moment o\u00f9 tous les bassins sont en production, avec un rebond des prix autour de <strong>P\u00e2ques<\/strong>, avant de redescendre jusqu\u2019\u00e0 la fin de la saison, atteignant leur niveau le plus bas (<strong>entre mi-mai et d\u00e9but juin<\/strong>) : <strong>3 \u00e0 6 \u20ac\/kg au stade exp\u00e9dition<\/strong> (asperges blanches, sud-ouest, cat\u00e9gorie 1, 16\u201322 mm). \u00ab C\u2019est autour de P\u00e2ques que les consommateurs attendent le plus l\u2019asperge, c\u2019est donc l\u00e0 que l\u2019on esp\u00e8re atteindre le pic de production. Le prix moyen en magasin se situe entre <strong>5 et 7 \u20ac par kilo<\/strong> \u00bb, ajoute Et\u00e8venaux.<\/p>\n\n\n\n<p>Face \u00e0 cette situation, les membres d\u2019<strong>Asperges de France<\/strong> r\u00e9fl\u00e9chissent depuis plusieurs ann\u00e9es \u00e0 la <strong>cr\u00e9ation d\u2019un outil d\u2019aide \u00e0 la d\u00e9cision<\/strong> permettant de mieux anticiper la dynamique de production des plantations d\u2019asperges. Un tel mod\u00e8le permettrait d\u2019<strong>optimiser la communication entre professionnels<\/strong>, notamment avec les grandes enseignes, et <strong>d\u2019organiser les travaux de r\u00e9colte et de conditionnement<\/strong>.<br>\u00c0 long terme, il permettrait aussi <strong>d\u2019anticiper les cons\u00e9quences du changement climatique<\/strong> sur la fili\u00e8re.<\/p>\n\n\n\n<p><strong>Asperges de France<\/strong>, en collaboration avec les stations de recherche <strong>INRAE<\/strong> et <strong>Invenio<\/strong>, travaille au d\u00e9veloppement de ce mod\u00e8le. La premi\u00e8re \u00e9tape a consist\u00e9 \u00e0 identifier les principaux <strong>param\u00e8tres biologiques et techniques<\/strong> li\u00e9s \u00e0 la cin\u00e9tique de production des aspergeraies.<\/p>\n\n\n\n<p class=\"field_LQ24868017C\">\u00ab Le premier prototype visait \u00e0 estimer la <strong>date du pic de production<\/strong>. Nous nous sommes concentr\u00e9s sur l\u2019impact de la <strong>temp\u00e9rature<\/strong> sur l\u2019initiation et la vitesse de croissance. Nous avons relev\u00e9 les temp\u00e9ratures de l\u2019air dans plusieurs bassins, et les avons transform\u00e9es en <strong>temp\u00e9rature des buttes couvertes<\/strong>, \u00e0 diff\u00e9rentes profondeurs. Nous avons ensuite calcul\u00e9 la date th\u00e9orique \u00e0 laquelle les besoins en froid et en chaleur de la plante sont atteints, \u00e0 partir de donn\u00e9es scientifiques \u00bb, explique <strong>\u00c9milie Casteil<\/strong>, cheffe de projet chez Asperges de France.<\/p>\n\n\n\n<figure class=\"wp-block-image alignnone wp-image-33921\"><img decoding=\"async\" src=\"https:\/\/www.asparagusworld.com\/wp-content\/uploads\/2023\/06\/270316_document.jpg\" alt=\"\" class=\"wp-image-33921\"\/><figcaption class=\"wp-element-caption\">La capacit\u00e9 \u00e0 anticiper la dynamique de production est un levier cl\u00e9 pour planifier les approvisionnements et les prix.<\/figcaption><\/figure>\n\n\n\n<h3 class=\"wp-block-heading field_LQ25227660C\">Autres facteurs \u00e0 prendre en compte<\/h3>\n\n\n\n<p class=\"field_LQ24868017C\">Les donn\u00e9es recueillies aupr\u00e8s des producteurs membres ont permis de construire un prototype pour <strong>estimer les pics de r\u00e9colte<\/strong> des ann\u00e9es pass\u00e9es. Les premiers r\u00e9sultats sont tr\u00e8s encourageants et indiquent que la m\u00e9thode est <strong>adapt\u00e9e \u00e0 l\u2019asperge<\/strong>. \u00ab Le pic de production est estim\u00e9 avec une <strong>pr\u00e9cision moyenne de 6 jours<\/strong>, allant de 1 \u00e0 13 jours selon les ann\u00e9es. Mais le prototype actuel <strong>ne permet pas encore d\u2019estimer la date de d\u00e9but de r\u00e9colte ni le rendement pr\u00e9visionnel<\/strong> \u00bb, pr\u00e9cise Casteil. Le travail va se poursuivre par la collecte de donn\u00e9es suppl\u00e9mentaires afin d\u2019<strong>affiner le mod\u00e8le<\/strong> et d\u2019en am\u00e9liorer la <strong>fiabilit\u00e9<\/strong> et la <strong>pr\u00e9cision<\/strong>. \u00ab Il est n\u00e9cessaire d\u2019int\u00e9grer d\u2019autres facteurs comme la <strong>vari\u00e9t\u00e9 et l\u2019\u00e2ge de la plantation<\/strong>, la gestion des <strong>films plastiques<\/strong> (c\u00f4t\u00e9 noir ou blanc), <strong>l\u2019ensoleillement<\/strong>, et les <strong>r\u00e9serves stock\u00e9es dans la griffe<\/strong> \u00bb, poursuit Casteil.<\/p>\n\n\n\n<p>Un <strong>doctorant<\/strong> devait \u00eatre recrut\u00e9 en 2023 pour approfondir ces recherches. \u00c0 terme, cela devrait permettre aux producteurs de <strong>s\u2019appuyer sur ce mod\u00e8le pour leurs d\u00e9cisions<\/strong>. Enfin, dans un contexte de <strong>changement climatique<\/strong>, cet outil permettra aussi <strong>d\u2019\u00e9valuer son impact sur la production d\u2019asperges dans les diff\u00e9rentes r\u00e9gions fran\u00e7aises<\/strong>. Les attentes des producteurs sont fortes, et les premiers r\u00e9sultats sont jug\u00e9s <strong>prometteurs<\/strong>. Selon Asperges de France, le mod\u00e8le pourra \u00eatre <strong>transpos\u00e9 \u00e0 l\u2019asperge verte<\/strong>, les donn\u00e9es d\u2019entr\u00e9e \u00e9tant identiques. Il faudra cependant l\u2019adapter \u00e0 ses <strong>sp\u00e9cificit\u00e9s de culture<\/strong> : pas de buttes ni de films plastiques, ce qui implique une autre approche thermique.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading field_LQ25227651C\">Les d\u00e9fis de l\u2019estimation de la production fran\u00e7aise<\/h5>\n\n\n\n<p class=\"field_LQ24868017C\">La production fran\u00e7aise d\u2019asperges s\u2019\u00e9l\u00e8ve \u00e0 <strong>25 800 tonnes<\/strong> sur plus de <strong>6 500 hectares<\/strong>. La France compte cinq <strong>grands bassins de production<\/strong> (Landes, Maine-et-Loire, Gironde, Gard, Bas-Rhin), mais l\u2019asperge est <strong>cultiv\u00e9e dans l\u2019ensemble du pays<\/strong>. Cette <strong>fragmentation de la production<\/strong>, avec <strong>peu de structuration entre producteurs<\/strong>, rend difficile l\u2019estimation des dynamiques de production pendant la saison.<br>La r\u00e9colte commence en <strong>f\u00e9vrier<\/strong> dans les premiers bassins (Landes), et se termine en <strong>juin<\/strong> dans les derniers (Maine-et-Loire). Selon les donn\u00e9es <strong>Kantar<\/strong>, <strong>58 %<\/strong> des achats d\u2019asperges se font en <strong>grande distribution<\/strong> (hypermarch\u00e9s, supermarch\u00e9s, EDMP, GSF), <strong>23 %<\/strong> sur les <strong>march\u00e9s locaux<\/strong>, <strong>10 %<\/strong> chez les <strong>primeurs<\/strong>, et <strong>8 %<\/strong> en <strong>vente directe<\/strong>.<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>The Asperges de France organisation is working on a crop forecasting model to optimise the marketing of white asparagus throughout the production campaign.
