Les asperges vertes sont cultiv\u00e9es dans toutes les r\u00e9gions italiennes, du nord au sud ; les blanches sont \u00e9galement r\u00e9pandues, mais particuli\u00e8rement pr\u00e9sentes dans le nord-est du pays ; tandis que les asperges violettes se retrouvent dans le nord-ouest, notamment en Ligurie.<\/p>\n\n\n\n<p class=\"intertitre\">Asperges blanches de haute qualit\u00e9<\/p>\n\n\n\n<figure class=\"wp-block-image alignleft\"><img decoding=\"async\" src=\"https:\/\/www.asparagusworld.com\/wp-content\/uploads\/2025\/05\/AW7-05.-Report-ITALY-table2-300x200.jpg\" alt=\"\" class=\"wp-image-34375\"\/><\/figure>\n\n\n\n<p>L\u2019asperge couvre au total 8 300 ha de la p\u00e9ninsule italienne. Mais la production est concentr\u00e9e dans les Pouilles, qui assurent environ 45 % du total national, suivies par la V\u00e9n\u00e9tie (23 %), l\u2019\u00c9milie-Romagne, le Latium et la Campanie (6 % chacune). La culture sous serre concerne environ 500 ha, principalement en Campanie. En 2024, l\u2019Italie a produit environ 45 000 tonnes d\u2019asperges. Une fois liss\u00e9es les diff\u00e9rences entre les zones de production du nord et du sud, accentu\u00e9es par les effets du changement climatique, le rendement moyen national s\u2019\u00e9l\u00e8ve \u00e0 5,5 t\/ha. En 2024, l\u2019Italie exportait toujours plus qu\u2019elle n\u2019importait, avec environ 7 850 tonnes exp\u00e9di\u00e9es, principalement des asperges vertes vers l\u2019Europe du Nord, entre mars et juin \u2013 surtout en mars et avril. Le pays a aussi trouv\u00e9 un d\u00e9bouch\u00e9 int\u00e9ressant au Japon pour ses asperges blanches de haute qualit\u00e9 (comme l\u2019Asparago Bianco di Bassano AOP). Les importations s\u2019\u00e9levaient \u00e0 seulement 2 650 tonnes, provenant surtout d\u2019Espagne, du P\u00e9rou et du Mexique, entre f\u00e9vrier et mai.<\/p>\n\n\n\n<p class=\"intertitre\">Des vari\u00e9t\u00e9s bien adapt\u00e9es aux diff\u00e9rents contextes<\/p>\n\n\n\n<p>L\u2019Italie cultive de nombreuses vari\u00e9t\u00e9s d\u2019asperges en raison de l\u2019\u00e9tendue nord-sud de sa zone de production (1 200 km). Dans le sud, les vari\u00e9t\u00e9s am\u00e9ricaines F1 telles que UC 157, Grande et Atlas dominent, mais on y trouve aussi des vari\u00e9t\u00e9s n\u00e9erlandaises (Starlin, Vegalim, Lunalim) et italiennes (Italo, Vittorio). Dans le nord, les vari\u00e9t\u00e9s destin\u00e9es \u00e0 la production d\u2019asperges vertes sont en grande partie d\u2019origine italienne (Athos, Eros, Ercole, Giove, Franco, Vittorio), mais on y cultive aussi de nombreux hybrides n\u00e9erlandais comme Avalim, Grolim, Thielim, Vitalim, Verdus. Pour les asperges blanches, les hybrides n\u00e9erlandais Avalim, Grolim, Prius et Thielim sont courants. Des hybrides italiens comme Giove, Vittorio, Zeno, ou encore la vari\u00e9t\u00e9 allemande Cumulus sont \u00e9galement utilis\u00e9s pour la production d\u2019asperges vertes ou blanches. On retrouve aussi des cultivars fran\u00e7ais : Darzilla pour les asperges vertes, Dariana pour les blanches. D\u2019autres vari\u00e9t\u00e9s existent, car il est toujours difficile de trouver la vari\u00e9t\u00e9 id\u00e9ale selon le contexte. Ces deux derni\u00e8res ann\u00e9es, la p\u00e9nurie de semences italiennes et am\u00e9ricaines a conduit \u00e0 davantage d\u2019investissements dans les vari\u00e9t\u00e9s n\u00e9erlandaises. Les essais montrent que ces vari\u00e9t\u00e9s offrent de tr\u00e8s bonnes performances les premi\u00e8res ann\u00e9es, mais qu\u2019elles perdent en rendement au fil du temps, contrairement aux vari\u00e9t\u00e9s italiennes qui gagnent en productivit\u00e9 et en long\u00e9vit\u00e9.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.asparagusworld.com\/wp-content\/uploads\/2025\/05\/AW7-05.-Report-ITALY-pourcentages-300x205.jpg\" alt=\"\" class=\"wp-image-34377\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"intertitre\">Besoin de vari\u00e9t\u00e9s adapt\u00e9es au changement climatique<\/p>\n\n\n\n<p>Le manque de main-d\u2019\u0153uvre est l\u2019un des principaux freins \u00e0 l\u2019expansion des surfaces plant\u00e9es. Cette p\u00e9nurie est devenue un v\u00e9ritable obstacle et provoque une hausse du co\u00fbt horaire. Les co\u00fbts de production augmentent \u00e9galement, du fait de la hausse des prix des intrants (engrais, produits phytosanitaires) et des b\u00e2ches plastiques utilis\u00e9es pour l\u2019asperge blanche. Par ailleurs, ces derni\u00e8res ann\u00e9es, les conditions climatiques atypiques ont fait chuter les volumes r\u00e9colt\u00e9s : printemps froids et pluvieux, \u00e9t\u00e9s tr\u00e8s chauds. En 2024, la r\u00e9gion des Pouilles a subi plus de 14 jours \u00e0 plus de 40\u00b0C, avec des pics \u00e0 45\u00b0C, affectant fortement la croissance v\u00e9g\u00e9tative des plantes et les revenus des producteurs. Face \u00e0 cela, il est urgent de d\u00e9velopper de nouvelles vari\u00e9t\u00e9s plus r\u00e9sistantes aux maladies printani\u00e8res en environnement humide dans le nord du pays, et plus tol\u00e9rantes \u00e0 la s\u00e9cheresse et aux fortes chaleurs dans le sud.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.asparagusworld.com\/wp-content\/uploads\/2025\/05\/AW7-05.-Report-ITALY-map-1024x987.jpg\" alt=\"\" class=\"wp-image-34378\"\/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p class=\"intertitre\">Un record europ\u00e9en de labels de qualit\u00e9<\/p>\n\n\n\n<p>Booster la consommation d\u2019asperges en Italie reste difficile. Les donn\u00e9es des 3-4 derni\u00e8res ann\u00e9es montrent que seulement 45 % des familles italiennes consomment des asperges au moins une fois par an. La consommation moyenne par foyer est de seulement 2,7 kg, un chiffre limit\u00e9 par le co\u00fbt \u00e9lev\u00e9 des asperges blanches et vertes, vendues principalement en grande distribution. L\u2019asperge peine aussi \u00e0 s\u00e9duire la jeune g\u00e9n\u00e9ration, qui la consid\u00e8re comme difficile \u00e0 cuisiner. En revanche, un point positif concerne les signes de qualit\u00e9 : l\u2019Italie d\u00e9tient le record europ\u00e9en avec six labels AOP et IGP. Pour les asperges blanches : Cimadolmo IGP, Badoere IGP, Cantello IGP, Bassano AOP (tr\u00e8s populaire).
