En veinte a\u00f1os, las superficies dedicadas al esp\u00e1rrago blanco se han multiplicado por cuatro, mientras que las destinadas al esp\u00e1rrago verde se han triplicado. Actualmente, unas 180 explotaciones cultivan esp\u00e1rragos en Suiza, principalmente en la Suiza oriental, seguida por la meseta central y la Suiza franc\u00f3fona.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.freshplaza.fr\/remote\/https\/agfstorage.blob.core.windows.net\/misc\/FP_de\/2025\/04\/15\/lid.jpg?preset=ContentFullSmall\" alt=\"\"\/><\/figure>\n\n\n\n<p><span class=\"image-container content_full\"><\/span><\/p>\n\n\n\n<p>A pesar de este crecimiento, la producci\u00f3n nacional a\u00fan no cubre la demanda. En 2024, Suiza import\u00f3 cerca de 3.600 toneladas de esp\u00e1rragos blancos y unas 5.700 toneladas de esp\u00e1rragos verdes. En total, el consumo de esp\u00e1rragos \u2013 tanto blancos como verdes \u2013 alcanza casi 1 kilo por habitante.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.freshplaza.fr\/remote\/https\/agfstorage.blob.core.windows.net\/misc\/FP_de\/2025\/04\/15\/lid1.jpg?preset=ContentFullSmall\" alt=\"\"\/><\/figure>\n\n\n\n<p><span class=\"image-container content_full\"><\/span><\/p>\n\n\n\n<p><strong>Un potencial de desarrollo considerable a\u00fan por explotar<\/strong><\/p>\n\n\n\n<p>El cultivo de esp\u00e1rragos es exigente: requiere grandes inversiones, un periodo de espera antes de la primera cosecha y una ventana de producci\u00f3n muy corta, de apenas dos meses al a\u00f1o. \u00abEl esp\u00e1rrago permanece en la misma parcela durante unos diez a\u00f1os, pero solo puede cosecharse a partir del tercer a\u00f1o\u00bb, explica Markus Waber, subdirector de la Uni\u00f3n de Productores Hort\u00edcolas de Suiza (UMS). Este tipo de cultivo a largo plazo exige paciencia, disciplina y experiencia.<\/p>\n\n\n\n<p>El trabajo es intenso: desde la formaci\u00f3n de los caballones hasta la recolecci\u00f3n diaria, pasando por la colocaci\u00f3n de pel\u00edculas pl\u00e1sticas, cada etapa requiere compromiso. Incluso despu\u00e9s de la cosecha, las plantas deben mantenerse sanas. \u00abAntes de empezar, una explotaci\u00f3n debe plantearse varias preguntas: \u00bfRealmente me interesa este cultivo? \u00bfTengo salida para el producto? \u00bfCuento con la infraestructura, la tierra adecuada y el personal necesario?\u00bb, contin\u00faa Waber. \u00abLos esp\u00e1rragos suizos son muy valorados por los consumidores. A diferencia de los productos importados, est\u00e1n disponibles en cantidades limitadas.
